Kachi ghani is a traditional method of extracting oil from seeds using a cold press process. In this process, the seeds are crushed at a low temperature, which helps to preserve the natural properties, antioxidants and essential oils in the oil.

The main benefit of the Kachi Ghani process is that it preserves the vitamins, minerals and aroma of the mustard oil.

Do the freezing test or rubbing test to check the purity of mustard oil. Put some mustard oil in the fridge for a few hours. If it solidifies or has white spots, it is adulterated. Rub some oil between your palms. If it leaves a coloured residue or has a chemical smell, it is adulterated.
